Lavender Gin Cocktail

- 2 tablespoons dried lavender buds
- 1 cup boiling water
- 2 ounces tonic water, preferably Fever-Tree
- 1 ounce dry gin
- 1 ounce fresh lime juice & 1 lime wedge for garnish
- 1/2 ounce agave syrup
- 1 lavender sprig
Put the dried lavender buds in a small basin that can withstand heat. After adding the boiling water, allow it to steep for half an hour. Pour the infusion of lavender through a fine-mesh strainer placed over a small basin, and dispose of the solids. Once cold, cover and chill.
Combine the tonic, gin, agave, lime juice, and half an ounce of lavender infusion in a rocks glass. Pour ice into the glass, add a wedge of lime and a sprig of lavender, and serve. Remaining lavender infusion can be used to create further cocktails.
